Cooking Instructions

  1. Make dough: mix flour, salt, and oil (2 tbsp). Add water gradually to form a firm dough. Rest 20 minutes.

  2. Cook urad dal filling: heat oil, add asafoetida, cumin, fennel. Add drained urad dal and cook until dry. Add red chilli powder and salt. Cool.

  3. Divide dough into small balls. Roll into circles. Place dal filling in center. Seal edges. Flatten slightly into thick discs.

  4. Deep fry on medium heat until golden and crisp. Drain on paper towels.

  5. To assemble: place 2 kachoris on a plate. Gently crack the top.

  6. Spoon in yogurt generously.

  7. Drizzle tamarind chutney and green chutney.

  8. Sprinkle chaat masala and sev.

  9. Garnish with fresh coriander and serve immediately.
