  1. Clean and marinate the protein with turmeric, salt, and half the red chilli powder for 20 minutes.

  2. Heat oil in a heavy pan. Add onions and fry until golden brown.

  3. Add ginger-garlic paste and cook for 2 minutes until the raw smell disappears.

  4. Add tomatoes and cook until they soften and oil begins to separate.

  5. Add coriander powder, remaining chilli powder, and garam masala. Stir well.

  6. Add the marinated protein and stir to coat with the masala.

  7. Cook on high heat for 5 minutes, then reduce to medium and cook until done.

  8. Add a cup of water if needed for gravy. Simmer for 10 minutes.

  9. Finish with fresh coriander leaves and serve hot.
