  1. Drain soaked moong dal and chana dal. Grind together with green chillies and ginger to a coarse batter — do not add water or add only a splash.

  2. Add salt and beat the batter well to make it fluffy and light.

  3. Heat oil in a deep kadai over medium-high heat.

  4. Drop spoonfuls of batter into hot oil forming irregular round fritters.

  5. Fry until golden and crispy, about 4–5 minutes. Drain on paper towels.

  6. Mix grated radish with a pinch of salt and let it rest for 5 minutes. Squeeze out water.

  7. Arrange fried ladoos in a plate. Top with squeezed grated radish.

  8. Drizzle green chutney generously.

  9. Squeeze lemon juice over the top.

  10. Sprinkle chaat masala and chopped coriander. Serve immediately.
