Peel and squeeze mangoes to extract the pulp. Strain through a sieve for a smooth puree.
Mix saffron in warm milk and add to mango puree.
Add sugar and cardamom powder to the puree. Mix well. Taste and adjust sweetness. Chill.
Make puri dough: mix wheat flour with salt and enough water to form a stiff dough. Rest for 10 minutes.
Divide dough into small balls. Roll each into a thin circle, about 10 cm in diameter.
Heat oil in a deep kadai. Fry puris one at a time, pressing them down gently with a slotted spoon so they puff up.
Fry until golden on both sides, about 1–2 minutes. Drain on paper towels.
Serve hot puris alongside the chilled aamras for dipping.
