Cooking Instructions

  1. Wash and soak rice for 20 minutes.

  2. Marinate prawns with turmeric, half the red chilli powder, and salt for 15 minutes.

  3. Heat oil. Add onions and fry until golden brown.

  4. Add ginger-garlic paste and cook 2 minutes.

  5. Add tomatoes, remaining red chilli powder, goda masala. Cook until oil separates.

  6. Add grated coconut and cook for 2 minutes.

  7. Add marinated prawns and stir-fry for 3–4 minutes.

  8. Add drained rice, kokum, and salt. Mix gently.

  9. Add hot water (1:2 ratio rice to water). Bring to boil.

  10. Reduce heat, cover tightly, and cook for 15 minutes until rice is done.

  11. Rest 5 minutes, then fluff gently. Garnish with coriander.
