  1. Rinse poha in a colander under running water for 30 seconds. Let drain for 5 minutes until just softened but not mushy. Sprinkle turmeric, sugar, and salt over drained poha. Mix gently.

  2. Heat oil in a large pan. Add mustard seeds and let splutter.

  3. Add curry leaves and green chillies. Sauté for 30 seconds.

  4. Add chopped onions and fry until translucent and lightly golden, about 5 minutes.

  5. Add roasted peanuts and stir for 1 minute.

  6. Add the seasoned poha. Toss gently to combine without mashing.

  7. Cover and cook on low heat for 3 minutes.

  8. Add lemon juice and mix gently.

  9. Garnish with fresh coriander and sev. Serve immediately.
