  1. Heat oil. Add mustard seeds, fennel, kalonji, fenugreek, and cumin (the panch phoran pickle spices). Add dry red chillies. Let splutter 30 seconds.

  3. Add ginger-garlic paste and cook 2 minutes.

  4. Add tomatoes and cook until soft.

  5. Add mango pickle and its oil. Stir well.

  6. Add yogurt in batches, stirring each addition.

  7. Cook on medium heat until oil separates.

  8. Add paneer cubes. Coat gently in the achari gravy.

  9. Simmer 5 minutes. Adjust salt (note: pickle is salty).

  10. Serve garnished with coriander alongside naan or rice.
