Cooking Instructions

  1. Sprinkle a pinch of salt over chopped methi leaves and let rest for 10 minutes. Squeeze to remove bitterness.

  2. Mix flour with squeezed methi, cumin, ajwain, ginger, green chillies, red chilli powder, turmeric, and salt.

  3. Add water gradually and knead into a soft, smooth dough. Rest 15 minutes.

  4. Divide into 8 equal balls. Roll each into a circle of about 15 cm diameter.

  5. Cook on a hot tawa on medium heat. When bubbles appear on the surface, flip.

  6. Apply ghee on both sides and cook until golden brown patches appear.

  7. Serve hot with yogurt, butter, or pickle.
