Cooking Instructions

  1. Heat ghee in a large, heavy pan. Add grated carrots and cook on high heat, stirring, for 5 minutes.

  2. Add full-fat milk and bring to boil. Cook on medium heat, stirring frequently, until all the milk is absorbed, about 25–30 minutes.

  3. Add sugar and mix well. The mixture will become loose — continue cooking until it thickens again and all liquid is absorbed.

  4. Add crumbled khoya and mix well. Cook for 5 more minutes.

  5. Add cardamom powder, cashews, and raisins. Stir well.

  6. Cook until the halwa leaves the sides of the pan and ghee begins to separate.

  7. Garnish with slivered almonds and pistachios.

  8. Serve warm or at room temperature.
