Cooking Instructions

  1. Soak matki for 8 hours, drain, tie in cloth, and leave at room temperature for 12–16 hours to sprout.

  2. Pressure cook sprouted matki with salt and turmeric for 2 whistles. Should be cooked but still firm.

  3. Heat oil. Add mustard seeds and curry leaves. Splutter.

  4. Add onions and cook until golden. Add ginger-garlic paste and green chillies. Cook 2 minutes.

  5. Add tomatoes and cook until soft.

  6. Add goda masala, red chilli powder, and tamarind paste. Mix well.

  7. Add cooked matki and mix gently.

  8. Add a splash of water and simmer for 10 minutes.

  9. Add grated coconut, adjust salt, and cook 2 more minutes.

  10. Serve with bhakri, pav, or as part of misal pav.
