  1. Hang yogurt in a muslin cloth for 6–8 hours (or overnight) to drain all whey. You should get approximately 400 g of thick, creamy hung curd.

  2. Soak saffron strands in warm milk for 10 minutes.

  3. Transfer hung curd to a bowl. Add powdered sugar and whisk until smooth and creamy.

  4. Add cardamom powder and saffron-infused milk. Mix well.

  5. Taste and adjust sugar.

  6. Chill for at least 1 hour.

  7. Serve in small bowls garnished with slivered pistachios and almonds. Traditionally served with puri.
